Crispy fried shrimp tossed in a creamy, spicy sauce, perfect for weeknight dinners or gatherings.
Ingredients
- 1 pound large shrimp (peeled and deveined, tails removed)
- 1/2 cup buttermilk
- 1/4 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp black pepper
- 3/4 cup cornstarch
- 1/4 cup high-quality mayonnaise
- 1 ½ tablespoons Thai sweet chili sauce
- 1-2 teaspoons Sriracha hot sauce (adjust to taste)
Instructions
- In a medium bowl, combine the shrimp, buttermilk, salt, garlic powder, onion powder, and black pepper. Let this marinate for about 10 minutes for enhanced flavor.
- Prepare a shallow dish with cornstarch for dredging the shrimp.
- One at a time, remove a piece of shrimp from the marinade, shake off the excess, and dredge it in cornstarch. Place on a baking sheet.
- Heat 1 ½ inches of oil to 350°F in a large pot. Fry the shrimp in batches for about 2 minutes or until golden brown, ensuring that the internal temperature reaches 145°F before removing.
- Transfer the shrimp to a paper towel-lined plate to drain any excess oil.
- In a separate large bowl, combine mayonnaise, sweet chili sauce, and Sriracha. Stir well, then add the fried shrimp, tossing gently to coat before serving.
