Ingredients
- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/3 cup flour (for streusel)
- 1 teaspoon cinnamon
- 2 tablespoons cold butter (for streusel)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, mash the ripe bananas until smooth.
- Mix in the melted butter until well incorporated.
- Stir in the baking soda, pinch of salt, granulated sugar, egg, and vanilla extract.
- Gently fold in the all-purpose flour, being careful not to overmix; the batter should be just combined.
- In another bowl, combine the brown sugar, additional flour, cinnamon, and cold butter. Mix until crumbly.
- Fill the muffin cups about two-thirds full with the banana batter, then sprinkle the streusel topping over each.
- Bake for approximately 18-20 minutes, or until a toothpick inserted comes out clean.
- Allow the muffins to cool slightly in the pan before transferring to a wire rack to cool completely.
Notes
For best results, avoid overmixing to prevent dense muffins. You can add nuts or chocolate chips for additional flavor.
