Description

Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/3 cup flour (for streusel)
  • 1 teaspoon cinnamon
  • 2 tablespoons cold butter (for streusel)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Mix in the melted butter until well incorporated.
  4. Stir in the baking soda, pinch of salt, granulated sugar, egg, and vanilla extract.
  5. Gently fold in the all-purpose flour, being careful not to overmix; the batter should be just combined.
  6. In another bowl, combine the brown sugar, additional flour, cinnamon, and cold butter. Mix until crumbly.
  7. Fill the muffin cups about two-thirds full with the banana batter, then sprinkle the streusel topping over each.
  8. Bake for approximately 18-20 minutes, or until a toothpick inserted comes out clean.
  9. Allow the muffins to cool slightly in the pan before transferring to a wire rack to cool completely.

Notes

For best results, avoid overmixing to prevent dense muffins. You can add nuts or chocolate chips for additional flavor.
