Description

Deliciously moist and simple Banana Muffins that are perfect for breakfast or a midday snack.


Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter until well combined.
  4. Mix in the baking soda and a pinch of salt.
  5. Add the sugar, egg, and vanilla extract, stirring until the mixture is cohesive.
  6. Carefully fold in the flour until just combined; be careful not to overmix.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for about 18-20 minutes, or until a toothpick inserted comes out clean.
  9. Allow to cool before serving.

Notes
