Deliciously moist and simple Banana Muffins that are perfect for breakfast or a midday snack.
Ingredients
- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted butter until well combined.
- Mix in the baking soda and a pinch of salt.
- Add the sugar, egg, and vanilla extract, stirring until the mixture is cohesive.
- Carefully fold in the flour until just combined; be careful not to overmix.
- Divide the batter evenly among the muffin cups.
- Bake for about 18-20 minutes, or until a toothpick inserted comes out clean.
- Allow to cool before serving.
Notes
Serve warm with a pat of butter or drizzle of honey. For fun, crumble over ice cream or use whipped cream as a topping.
