Description

Deliciously moist and simple to make, these banana chocolate chip muffins bring comfort to any morning.


Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup chocolate chips
  • 1/2 cup chopped walnuts (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the mashed bananas and melted butter until they form a uniform mixture.
  3. Stir in the sugar, egg, and vanilla extract until the mixture is nicely blended.
  4. Add in the baking soda and salt, then gently fold the flour into the mixture until just combined—be careful not to overmix!
  5. If you want, fold in the chocolate chips and chopped walnuts for added texture.
  6. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool for a few minutes before transferring them to a wire rack to cool completely.

Notes

Make sure your bananas are very ripe for the best flavor and sweetness. Avoid overmixing the batter for soft and fluffy muffins.
