Ingredients
- 2 ripe bananas, mashed
- 1/2 cup butter, melted
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1 cup chocolate chips
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine the mashed bananas and melted butter until they form a uniform mixture.
- Stir in the sugar, egg, and vanilla extract until the mixture is nicely blended.
- Add in the baking soda and salt, then gently fold the flour into the mixture until just combined—be careful not to overmix!
- If you want, fold in the chocolate chips and chopped walnuts for added texture.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool for a few minutes before transferring them to a wire rack to cool completely.
Notes
Make sure your bananas are very ripe for the best flavor and sweetness. Avoid overmixing the batter for soft and fluffy muffins.
