Irresistible soft and chewy cookies packed with rich chocolate chips and the natural sweetness of overripe bananas.
Ingredients
- 1 small overripe banana, mashed (should measure 1/4 cup – discard any excess)
- 1/2 cup vegetable oil or melted butter
- 1 cup light brown sugar, packed
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1 1/3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 2/3 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the melted butter (or oil), packed brown sugar, and mashed banana until smooth.
- Add the egg yolk and vanilla extract, mixing until fully incorporated.
- Combine the dry ingredients: add the flour, baking soda, cinnamon, and salt, and stir just until no flour streaks remain.
- Gently fold in the chocolate chips.
- Let the dough rest at room temperature, covered, for about 15 minutes.
- Scoop 1-inch balls of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10 to 11 minutes, until the edges are set, and the centers look slightly underbaked.
- Transfer the cookies to a wire rack to cool slightly before enjoying.
Notes
Store cookies in an airtight container at room temperature for up to a week. Freeze for longer storage.
