Description

Irresistible soft and chewy cookies packed with rich chocolate chips and the natural sweetness of overripe bananas.


Ingredients

  • 1 small overripe banana, mashed (should measure 1/4 cup – discard any excess)
  • 1/2 cup vegetable oil or melted butter
  • 1 cup light brown sugar, packed
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2/3 cup chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the melted butter (or oil), packed brown sugar, and mashed banana until smooth.
  3. Add the egg yolk and vanilla extract, mixing until fully incorporated.
  4. Combine the dry ingredients: add the flour, baking soda, cinnamon, and salt, and stir just until no flour streaks remain.
  5. Gently fold in the chocolate chips.
  6. Let the dough rest at room temperature, covered, for about 15 minutes.
  7. Scoop 1-inch balls of dough onto the prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 10 to 11 minutes, until the edges are set, and the centers look slightly underbaked.
  9. Transfer the cookies to a wire rack to cool slightly before enjoying.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze for longer storage.
