Description

These banana bread muffins combine the classic flavors of banana bread with the convenience of handheld portions, perfect for any occasion.


Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • A pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup mini chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Pour in the melted butter and stir it into the mashed bananas.
  4. Mix in the baking soda and salt.
  5. Add the sugar, beaten egg, and vanilla extract, stirring well.
  6. Gradually mix in the flour until just combined; don’t overmix.
  7. Gently fold in the mini chocolate chips.
  8. Pour the batter into a greased muffin tin, filling each cup about two-thirds full.
  9. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow them to cool slightly before serving.

Notes

These muffins can be customized with nuts, dried fruits, or different types of chocolate. For the best results, use very ripe bananas.
