Ingredients
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- A pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup mini chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Pour in the melted butter and stir it into the mashed bananas.
- Mix in the baking soda and salt.
- Add the sugar, beaten egg, and vanilla extract, stirring well.
- Gradually mix in the flour until just combined; don’t overmix.
- Gently fold in the mini chocolate chips.
- Pour the batter into a greased muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow them to cool slightly before serving.
Notes
These muffins can be customized with nuts, dried fruits, or different types of chocolate. For the best results, use very ripe bananas.
