Ingredients
- 1 cup mashed ripe bananas (about 2 medium bananas)
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup chopped walnuts (optional)
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in the mashed bananas, egg, and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually incorporate the dry ingredients into the wet ingredients, stirring just until combined.
- If using, gently fold in the walnuts and chocolate chips.
- Drop tablespoon-sized portions of dough onto the prepared baking sheet, spaced about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a chewier texture, slightly underbake the cookies by a minute or two. Store in an airtight container for up to a week or freeze for longer storage.
