Ingredients
- 2 ripe bananas, mashed
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Optional: 1/2 cup chocolate chips, chopped walnuts, or pecans
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon until well combined.
- In another bowl, mash the ripe bananas until smooth, then mix in the melted butter, brown sugar, granulated sugar, the egg, and vanilla extract, stirring until silky.
- Gradually integrate the dry mixture into the wet components, mixing until just combined.
- If desired, fold in chocolate chips or nuts.
- Drop rounded spoonfuls of dough onto your prepared baking sheet, spacing them about an inch apart.
- Bake for 10-12 minutes, until the edges are golden and the centers appear set.
- Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack.
Notes
For best results, use very ripe bananas. Don’t overmix the dough to keep cookies soft and tender.
