Description

Delightful fusion of banana bread and cookies, perfect for snacks and gatherings.


Ingredients

  • 2 ripe bananas, mashed
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chocolate chips, chopped walnuts, or pecans


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon until well combined.
  3. In another bowl, mash the ripe bananas until smooth, then mix in the melted butter, brown sugar, granulated sugar, the egg, and vanilla extract, stirring until silky.
  4. Gradually integrate the dry mixture into the wet components, mixing until just combined.
  5. If desired, fold in chocolate chips or nuts.
  6. Drop rounded spoonfuls of dough onto your prepared baking sheet, spacing them about an inch apart.
  7. Bake for 10-12 minutes, until the edges are golden and the centers appear set.
  8. Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack.

Notes

For best results, use very ripe bananas. Don’t overmix the dough to keep cookies soft and tender.
