  • 4 large eggs

  • 1 teaspoon paprika (smoked or sweet)
  • Salt and black pepper to taste
  • 1 cup bell peppers, chopped
  • 1 cup fresh or thawed spinach
  • 1/2 cup sun-dried tomatoes, chopped


Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a large bowl, whisk the eggs lightly, then mix in cottage cheese, Parmesan, chives, garlic powder, paprika, salt, and pepper.
  3. Fold in the bell peppers, spinach, and sun-dried tomatoes.
