- 1 cup cottage cheese
- 4 large eggs

- Salt and black pepper to taste
- 1 cup bell peppers, chopped
- 1 cup fresh or thawed spinach
- 1/2 cup sun-dried tomatoes, chopped
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a large bowl, whisk the eggs lightly, then mix in cottage cheese, Parmesan, chives, garlic powder, paprika, salt, and pepper.
- Fold in the bell peppers, spinach, and sun-dried tomatoes.
- Pour the mixture into the prepared baking dish and smooth the top.
