Description

A delightful dish that perfectly blends rich flavors and vibrant ingredients, featuring mildly spicy Cajun salmon topped with creamy avocado lime sauce.

Ingredients

  • 4 salmon fillets
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 ripe avocado
  • 1 lime (juiced)
  • 1/4 cup Greek yogurt or sour cream
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and place your salmon fillets on it.
  3. Drizzle the olive oil over the fillets and sprinkle Cajun seasoning generously.
  4. Bake the salmon in the preheated oven for about 12-15 minutes or until cooked through and flaky.
  5. While the salmon bakes, prepare the avocado lime sauce by blending the avocado, lime juice, Greek yogurt (or sour cream), and a pinch of salt until smooth.
  6. Once the salmon is out of the oven, serve it topped with the creamy avocado lime sauce and garnish with fresh cilantro.

Notes

For a delightful meal, serve on a bed of quinoa or alongside roasted veggies. Pairs well with a chilled white wine.
